Easy chicken traybake

This Jame Oliver recipe is one of my favs at the moment.

It’s easy, healthy is a family favourite and can be served up to guests too.

I love recipes that I can prepare in advance so I can just pop it in the oven when I get home from kids sport or when the guests arrive. 

This one serves 4, takes 10 min to prep and 30min to cook

500g cherry tomatoes, halved
6 cloves of garlic, smashed4 chicken breasts (I cut mine in half so you could serve 6-8 if they’re big)
1/2 tsp smoked paprika
tsp dried oregano
4 rashers of bacon (or one per person)
1 lemon
fresh rosemary sprigs
olive oil
asparagus
potatoes

Preheat the oven to 200C if cooking straight away.
Put the cherry tomatoes and garlic in the bottom of your baking tray.
Top with chicken breasts and sprinkle the paprika and oregano on top.
Place one rasher of bacon over each piece of chicken and put lemon wedges in between.
Pick over the rosemary leaves and drizzle with olive oil.
Roast for 25 – 30 mins until the chicken is cooked through.
While the chicken is cooking, steam the asparagus and cook your potatoes.

The lemon, tomatoes and garlic make a delicious light sauce that you can drizzle over the dish once served.
