Smoked chicken & quinoa salad

This protein rich salad is quick and easy to throw together on a hot summers evening.  It’s a family favourite but is fancy enough to make for friends.

You’ll need:

1 – 2 cups quinoa (depends how many you’re catering for)
2 – 4 cups chicken stock
hand full of snow peas, trimmed
1 red onion, sliced
2 smoked chicken breasts, sliced
handful of walnuts, chopped
2 apples, finely sliced
handful mint, finely sliced
1 tbs apple cider vinegar

Cook the quinoa in the stock as per packet instructions.  Add the snow peas for the last two minutes.
Drain and place on serving dish allowing to cool slightly.
Heat a dash of olive oil and cook the onion until soft.
Add chicken, onion, walnuts, apple and mint to quinoa and drizzle with vinegar.
