Granola Bites

Ingredients
– 70g dried apricots
– 50g almonds (I use slivered)
– 70g oats
– 30g pumpkin seeds (pepitas)
– 40g sunflower seeds
– 20 sesame seeds
– 20g flaxseeds (linseeds)
– 60 cashews (or what you have available)
– 20g pistachios
– 20g walnuts
– 20ml honey / maple syrup
– 1 egg white
– pinch of salt

Instructions

  • soak dried apricots in cold water for 15 – 20 minutes, then chop
  • mix all nuts and seeds together in a bowl
  • add apricots, honey, egg white and a pinch of salt
  • mix
  • place on baking tray (I use cupcake papers)
  • bake in a pre-heated oven at 180C for 15-20 minutes or until browned
  • enjoy 😉
