Fish curry

Super easy, quick fish curry

I made this for my family in just 20 minutes and I think it’s going to become a favourite of mine.

It’s creamy without the cream

It’s easy and it’s quick.  Tick, tick, tick!

 

You’ll need:

750g fish (I used Ling)

200g Greek yoghurt

2 tsp ground tumeric

2 garlic cloves, crushed*

3 cm piece ginger, grated*

1 tbs coconut oil

1 onion, sliced

1 tbs curry powder

2 chillies, sliced

coriander to serve

What to do:

Cut fish into large chunks

Combine yoghurt, tumeric, ginger, garlic and add fish. Mix to coat

Heat oil and add onion.  Cook gently until softened and golden

Add curry powder and cook for a minute

Add 1/4 cup water and stir to combine

Add fish with marinade and bring to a simmer

It should be done in about 10 minutes

Top with coriander and serve

Serve with brown rice for added fibre or cauliflower rice if you want to keep the carbs low

*I always have the bottled variety in the fridge in case I don’t have fresh at home
